Spinach Avocado & Corn Salsa Salad

It was so nice outside yesterday. The July weather finally went away, and it was in the low 80s and beautiful finally with no humidity! I decided to open up all the windows and eat dinner on our porch (:  After work I made a quick and easy salad with. I sadly forgot to get a cucumber at the market..but hey you can never go wrong when you have avocado, sprouts, tomato, corn, onion, and lime together-it’s like a salsa over spinach.

















Alfalfa Sprouts–make sure to get organic, because GMO sprouts were just approved 😦












Spinach Avocado & Corn Salsa Salad



1/4 cup Chopped Red Onion

Sliced Roma Tomato

Half of an avocado cut into chunks

1/4-1/3 cup of organic yellow corn

Chopped Cucumber (that I forgot)

3 or so Tbs of fresh chopped cilantro

Fresh lime juice & EVO Oil

(This would be great with some chopped green and red bell peppers as well)


The easiest and delicious dressing for this is simply EVO oil & lime juice.










It’s always best to add a ton of color to your salad!










I ate out on the porch with the nice breeze from the water


The geese decided to join me…












Some green tea was a great way to end the night.
